I was talking to a friend the other day who mentioned that she was having left-over pad thai for dinner. She then mentioned that she was going to stir in some of our Spicy Tomato honey jelly to add some additional spice because it needed a kick. Brilliant, right?
Into the kitchen I went. I certainly could have gone to the store to pick up all the ingredients I'd need for pad thai but I was being lazy. Y'all know what I saying, right? As luck would have it, I had a couple heads of broccoli in the fridge and some peanut butter in the pantry and, ta da, Broccoli with Spicy Peanut Sauce was born.
By all means, if you've got a favorite peanut sauce use it. Just remember, don't add the sugar if your recipe calls for it as you'll get enough sweetness from our Spicy Tomato honey jelly. If you don't have one, however, here's mine. If you like it to be spicier, don't add more of the jelly because then the sauce will be too sweet. Instead, add some additional red pepper flakes or hot sauce of your choice.
3 tablespoons peanut butter2 1/2 tablespoons tamari (or soy sauce)2 tablespoons rice vinegar2-3 tablespoons Spicy Tomato honey jelly1 tsp cornstarchWhisk all the above together and set aside. Roast broccoli in the oven at 425 degrees for about 20 minutes (stir half way). Saute about 1/2 cup sliced onions with 2 cloves garlic in some sesame oil. Add the spicy peanut sauce to pan and cook, stirring until the sauce thickens. Add roasted broccoli and stir to coat.
